Lazy Zucchini Boats
These zucchini boats were born out of convenience and creativity. My family has movie night on occasion, and my kids love it when I come up with a theme for our dinner that goes along with the movie. The movie we watched tonight was Jaws. Trying to keep my family on the nutritarian diet, while also planning a themed dinner, can be challenging. This one was easy for me. I decided on zucchini boats and used a tortilla chip as a shark fin. I'll spare you the theme pictures, but here's the recipe for a quick and very convenient dinner.
Ingredients:
One package of ready-to-go organic brown rice (I bought this pre-cooked, but you could cook your own)
One container of low sodium salsa
One package frozen corn
One can of black beans, rinsed and drained
Zuccini (this recipe made 6 boats)
Directions:
- Preheat oven to 350 degrees F
- Cut zucchinis in half, long ways
- Remove enough of the insides of the zucchini slices that you have enough room for the filling (I used a melon baller and removed about two thirds of the insides) Set zucchinis aside.
- In a large bowl, add remaining ingredients and mix together until blended
- Add filling to the zucchini boats and cook for 20 to 25 minutes.
