Easy Pico De Gallo
Add some flavor to any Southwestern dish with this yummy (and simple!) pico de gallo. Tonight I made these for a quick throw-together dinner for myself. I warmed a few corn tortillas on the stove, added some black beans, threw some cole slaw mix on it and topped it with this pico de gallo.
This is the perfect example of a meal that wasn't planned. I had the black beans in the fridge, from a batch that I had made in the Instant Pot earlier this week. My best friend just gave me a lot of fresh veggies from her garden. The tortillas were in the fridge from a previous meal and the cole slaw mix is something I like to use for salads on occasion.
Tonight I had such a craving for Mexican food, so I threw together some pico and made this dish.
Ingredients:
Diced tomatoes (I used one large one for a personal serving of pico)
1/4 of red onion, diced (or more, depending on how many you're serving)
Minced cilantro to taste
Juice of one lime 🍋🟩
Instructions:
Add all ingredients together and serve with your favorite dish!
I made this to put on my corn tortilla tacos with black beans. I had some left over after having my tacos, so I put this on top of a bed of the cole slaw mix. It made a delicious salad! The possibilities are endless. ❤️
